Clean Out the Fridge

Last week we had a bunch of eggs and greens left the day before pickup, plus other random odds and ends, a situation that calls for torta: Fry some onions (and or garlic scapes) and steam the greens. While they cook, beat a few eggs with some milk or cream and a bit of nutmeg or allspice. Squeeze the moisture out of the cooked greens and chop roughly. Mix with the onions, eggs and any leftover bits of cheese. Throw in a couple crumbled bread heels, toast crusts, or that little container of rice or pasta. Bake @350* for ~40 minutes, or until done. It’s good warm or cold and makes a great portable meal. Now your belly is full and your fridge is clean–ready for tomorrow’s pickup!
