Snap Pea and Sundried Tomato Soup

We had this for dinner tonight, and it was really tasty.

1 quart of stock (we used “rooster rescue” stock– helping our chicken-farming friend get rid of his old and ornery males…. but, you might use vegetable stock, too)

1/2 cup Orzo or other small soup pasta

1 & 1/2cup whole snap peas

1 garlic scape, cut in 1/4″ pieces

3-4 sundried tomatoes, chopped fine

Salt and pepper to taste

 

Put it all in a saucepan on the stove and, well, “cook ’til done.”
