Another Garlic Scape Pesto! (A little less intense!)

We also like to make a pesto out of garlic scapes.  You’ll need a handful of scapes, which we chop up in the food processor, and then add at least twice as much other green stuff.  Spinach and parsley are good choices, and really let the flavor of the scape come through.  We also toss in a handful of walnuts, some salt, parmesan, and process again.  Finally, add a glug glug glug of olive oil, and process one last time.  This pesto is great spread on bread for sandwiches, or on pasta, or a glop of it on top of grilled veggies or chicken.
