Roots and Beef Brisket

3 potatoes, thick-sliced
1 carrot, thin-sliced
(rutubagas, turnips, parsnips, celeriac would be great)

2 celery ribs, sliced
1 corned beef brisket, 1.5 lbs
half a cabbage
1/4 t pepper
3/4 cup water

Get a crockpot.  (This recipe’s for a small ‘pot.)  Potato & carrots on the bottom, then brisket, then cabbage wedges.  Pepper on top, add water.  Cover & cook on low for 8 hrs.
